Silverton executive chef Ashley Archer and Twin Creeks Steakhouse executive room chef Jaimee Pepe are teaming up on this podcast interview and in the kitchen these days to bring diners something special. The popular Mi Casa restaurant has been serving a second menu featuring favorite dishes from Twin Creeks including shrimp cocktail, the petite filet with roasted garlic mashed potatoes, truffle fries, mushroom risotto and much, much more.
It’s all about the Silverton crew finding a way to offer more during a challenging time for customers as well as the restaurant industry and its workers.
“Originally the special menu started off very limited with 10 or 12 items, but once we figured out this was going to go on longer than we anticipated, we went back and revamped it and expanded it even more,” Archer says. “I think it’s been fun and also an exciting time for our service staff.”
It’s fun for diners, too, who get to choose between Mi Casa’s extensive Mexican food menu and the classics from the Twin Creeks menu, with no limitations. The Silverton has even revived the beloved Filet Fridays and Prime Rib Sundays promotions, serving it all up in the spacious and vibrant Mexican restaurant.
“It’s been nice to broaden my knowledge of Mexican cuisine and to get to know that team, so now it feels like a bigger family, too,” says Pepe. “You have people come in [saying], ‘Wow, I can order both and I can intermingle?’ We get a lot of orders for appetizers from Twin Creeks mixed with entrees from Mi Casa, which is nice to see.”
